This weekend I'm roasting the long awaited coffee from Chiapas, an Organic CoOp, PROISCH. PROISCH, or Produtores Indigenas Serranos De Chiapas, is one of the few that my broker selected from Mexico. This year had an incredible lot from this Chiapas CoOp so it made the cut.
Sipping on the cup now, morning after the roast-less than 12 hours of rest, it's light with a mild tang from acidity. Initially it has a gentle nutty flavor, as the sweetness becomes pronounce a fruity and berry finish comes in. This is an elegant tasty cup. The sweetness really stands out in this cup.
Thinking about that sweetness, I can't wait to get this made from my aeropress.
Since starting a second cup a breakfast burrito has come onto the scene, mmmm, they go very well together.
