Traditional P*DE*Q Sliders

Ingredients

  • 20  P*DE*Q cooked, cooled and cut in half
  • 20 oz. Ground Beef (20% Fat)
  • 1 Yellow Onion, halved and thinly sliced
  • 2 tsp Granulated Sugar
  • 1 tsp Garlic, finely chopped
  • 2 tbls Kosher Salt
  • 1 tsp Fresh Sage, finely chopped
  • 1 tsp Fennel Seed
  • 1 tbls Fresh Ground Pepper

Instructions

In a large mixing bowl combine thoroughly the ground beef, garlic, sage, fennel seed, and pepper.  Place in refrigerator for an hour to marry flavors.

In a large sauté pan, cook onions until light brown.  Add sugar and continue sautéing until medium brown and sweet to taste. 

Preheat oven to 350 degrees.  Line a baking sheet with parchment paper.  Roll beef mixture into 20 – 1 ounce balls and place evenly on baking sheet.  Place in oven for 10 minutes or until centers reach 145 degrees.

To assemble place a teaspoon of caramelized onions on the bottom half of P*DE*Q and top with cooked meat ball and P*DE*Q top half.
