McLaren's Favorite Pumpkin Cupcakes

A good friend of mine was having a birthday party for her six year old and I offered to make the birthday cake, to practice my baking and decorating skills. When I asked about cake flavor, her daughter requested Pumpkin cake, as it was a Halloween birthday.  A week prior, I decided to test out a recipe on my family and friends.  A few days later, after a visit to the local Haunted House, I sent my friends, the McLaren family home with a same batch.  Shortly after, I received excellent reviews, confessions of quantity of cupcakes eaten and vows of an exercise regime due to said eaten cupcakes because they were so yummy!  I knew that I had a hit on my hands with this recipe!

Ingredients

15 Oz.  Canned Pumpkin Puree

1 lb Unsalted Butter, softened

1 Cup Granulated Sugar

4 Eggs

2 1/2 Cups Cake Flour

1 Teaspoon Baking Soda

1/2 Teaspoon Baking Powder

1/2 Teaspoon Salt

Instructions

Pre-heat oven to 350 degrees. 

Cream together Butter, Sugar and Pumpkin Puree until smooth. Add in salt, baking soda, baking powder and pumpkin pie spice until blended. 

Alternate flour with eggs until all used and blended. Do not overmix!

Line cupcake pan with cupcake papers and fill 3/4 the way full with batter and bake at 350 degrees for 35-40 minutes until done. (Test with toothpick, if it comes  out clean cupcakes are done! - time will vary.)

Let cool for a few minutes, remove from pan and let cool completely.
