Made these little cups by the dozens in Culinary School dessert Mod...and by the time the weekend rolled around, I wanted to do something savory instead of sweet. Thus the birth of the Mushroom Onion Bites!! Mmmmm..good.
Ingredients:
1 lb Mushrooms, washed and diced.
1 lb Bacon, cooked crispy and crumbled.
1 Yellow Onion, diced and caramelized.
Crumbled Gorgonzola Cheese, for garnish.
1 Package Frozen Puff Pastry Sheets.
1 Egg, for egg wash.
1/2 Cup Red Wine of choice.
Salt and pepper to taste.
Pre-heat oven to 350 degrees.
Cook bacon till crisp. Remove bacon and crumble.
Deglaze pan with two tablespoons of wine. Add in mushrooms, onions and cook until onions are caramelized and mushrooms are tender.
While mushroom and onion mix is cooking, cut out shapes of puff pastry to make cups. Cut out base, and using same size as the base, cut out another shape, then remove the middle of that shape, using egg wash attach to base. *This will cause puff pastry to rise up in a small cup shape.*
Bake puff pastry cups at 350 degrees until golden brown and remove.
Once onion and mushroom mixture is cooked, add in crumbled bacon,salt and pepper to taset and then spoon into baked puff pastry cups.
Top with gorgonzola cheese and place back into oven until cheese is melted. Serve right away to enjoy the bubbly goodness!
