4 lbs. golden potatoes
¼ cup corn starch
2 Tbsps. shallots, finely chopped
2 Tbsps. chopped herbs (parsley, sage, rosemary and thyme)
Salt, as needed
Clarified butter, as needed
Cracked black pepper, as needed
Whole butter, as needed
Scrub the potatoes clean. Shred the potatoes on a mandolin, vegetable noodler or grater. Place shredded potatoes, shallots and herbs in a mixing bowl, season with salt and pepper, add corn starch and mix until incorporated.
Place a nonstick or cast iron pan on medium heat Once the pan is hot (but not smoking), add about ¼ inch clarified butter to the pan.
