Pan-Roasted Steelhead and Potato Roesti

Ingredients

  • 4 lbs. golden potatoes

  • ¼ cup corn starch

  • 2 Tbsps. shallots, finely chopped

  • 2 Tbsps. chopped herbs (parsley, sage, rosemary and thyme)

  • Salt, as needed

  • Clarified butter, as needed

  • Cracked black pepper, as needed

  • Whole butter, as needed

     

 

Instructions

Scrub the potatoes clean. Shred the potatoes on a mandolin, vegetable noodler or grater. Place shredded potatoes, shallots and herbs in a mixing bowl, season with salt and pepper, add corn starch and mix until incorporated.

 Place a nonstick or cast iron pan on medium heat Once the pan is hot (but not smoking), add about ¼ inch clarified butter to the pan.
