• 4 Large Potatoes
• 2 and a half medium sized Onions
• Salt (Whatever you like)
• Black Pepper
• 4-5 Eggs
• Half bell pepper
• Half a cup of flour
• 4-5 Slices of the Cheese you like
Cut the potatoes in little square pieces. Slice the onion and bell pepper in thin pieces. Fry the potatoes until you are able to easily pick them up with a fork. Fry the onion and bell pepper next. Get rid of the oil. Stir the eggs, flour, salt and black pepper until it’s not too thick in a big bowl and add the potatoes, onions and bell peppers. Stir everything again. Heat 1 teaspoon of oil in a pan (between medium and high). Add the ingredients and make an even round shape. Make sure you don’t go anywhere and check that the bottom part does not get burned. After the middle part of the omelette is half-cooked use a plate and put it on top of the pan. Flip the omelette to the plate. Quickly add 1 teaspoon of oil again wait 1-2 minutes and carefully put the uncooked half on the pan. After 2-3 minutes move the pan with mild force forward and backwards and make sure you are able to move the omelette doing that. Put the heat between low-medium add the slices of cheese on top and cover the pan. After 3 min turn off the heat and let it rest for another 3-4 min. Serve!
You can get creative ones you get the hang of making this without breaking the omelette up. You can add additional ingredients (I add Bacon most of the time) also you can make 2 thinner omelette and put the cheese in between them or even pieces of avocados.
Bon Appétit!

Looks good. I haven't had Spanish omelette in years! I'll be trying your recipe.
