Fig White Chocolate Pie

Ingredients

12 oz white chocolate chips
1-1/2 cups stemmed and finely chopped dried figs
1 store-bought or homemade graham cracker pie crust
2 eggs
2/3 cup canned milk

Instructions

Preheat over to 350. Melt the white chocolate in the micro with the milk. Be careful not to scald. Melt the chips and let cool down to just above room temp (not too cold or it will be stiff. Mix in the two beaten eggs and then the figs. Turn in to the pie crust and bake for 30 to 35 minutes or until the top feels somewhat firm. Should be golden brown and a knife should come out clean. This is tricky here...I over cooked it a tiny bit Saturday because I was freaked out that the knife wasn't clean. If you cook to 35 or 40 minutes then let it cool....it will set up. You don't want it being too dry but you also don't want it being runny. Top with whipped cream dollop.
