Tomato Green Beans (loubieh bi zeit)

Ingredients

  • Green Beans, I personally prefer the thin French beans. Just get the fresh french bean bag from Costco its about a pound
  • One large onion
  • 2 cloves of garlic
  • olive oil, 4 table spoons
  • Diced tomatoes (fresh or about 2 cans)
  • Black pepper, salt, cinnamon, coriander to taste

 

Instructions

  • Cut the ends off the beans, and then cut into strips about 1.5 inches long
  • Dice the onion, coarse
  • Dice the garlic, fine
  • Dice the tomatoes, or open your cans, even tomato paste if in a bind

I personally use a pressure cooker, but you can use a regular pot.
Heat up the olive oil, drop in the onions and garlic, fry it up till wilted - not more.
Then drop in the washed and strained beans, stir them around with the onions and garlic on medium-high heat for a few minutes while stirring often.
Add the diced tomatoes, and spices, cook to taste, I personally give them 2 minutes in the pressure cooker and they are ready.

Serve hot or cold with pita bread
