No Bake, Kinda Fake (?) Cheesecake

I learned this recipe from a friend a few summers back. It is a simple and refreshing cheesecake desert. It isn't as heavy as a regular cheesecake, either - which makes it a perfect summer day treat. :)

Ingredients

2 - 8oz. packages cream cheese (room temperature)
1 - 8oz. package of whipped cream
1 - Prepared graham cracker pie crust
1tsp vanilla extract
1/2 cup sugar

Instructions

In a mixer, place the two packages of cream cheese and the sugar. Blend on high speed until the sugar is blended in and the cream cheese is whipped. (about 3 minutes)

Then, add the vanilla, and begin to slowly blend in the whipped cream by spoonfuls at a time. Keep mixing on a high speed, and continually scraping down the sides.

When the mixture is well mixed, light, and fluffy, it is time to put it into the pie crust. Spread the cream cheese mixture evenly into the pie crust and cover.

Place the entire thing in the fridge for about an hour, and enjoy when it is chilled!
