Cheese and Sausage Grits

This is another from my wife's co-worker. Grits are a Southern staple, and I've had them with cheese, butter, shrimp, or just plain, but I had never had them with sausage. It's a welcomed change!

Ingredients

  • 1 tube Jimmy Dean’s regular sausage, browned
  • 1 tube Jimmy Dean’s spicy sausage, browned
  • Tabasco sauce to taste
  • 1/3 clove garlic, minced (I use about 1 tsp.)
  • 1/2 tsp. pepper
  • 1 cup instant grits
  • 2 cups boiling water
  • 1 cup sharp Cheddar cheese (I use 1 1/2 cups)
  • 1/4 cup butter, melted
  • 4 eggs, well beaten
  • 1 8-ounce can mild green chilies, seeded and chopped.
  • 1/2 small can of Jalapenos (if desired)

Instructions

Brown sausage and drain. Add Tabasco sauce, garlic, salt and pepper to sausage.  Set aside. Cook grits in 2 cups boiling water.  Add all ingredients together, stirring until well mixed. Pour mixture into a well buttered 9X13X2 inch baking dish. Bake uncovered at 350 degrees for 1 hour.
