Chicken Mole

Back in college, I spent a couple of months on a missions trip in the Yucatan peninsula of Mexico. Our team had no money, so we had to learn from the locals how to stretch a dollar. This meal was shown to us by a pastor's wife, and was one of the favorites because it's flavorful and cheap.

Ingredients

  • 18 ounce can mole sauce
  • 1 bag green lintels
  • 3 white onions, diced
  • 3 cloves garlic
  • 6-8 chicken breasts, cut into small pieces
  • Fresh cilantro
  • Olive oil
  • 2 cubes chicken stock
  • 2 cups white rice
  • Tortillas (corn or flour)

Instructions

Cook lentils in plenty of water for at least 30 minutes. Start rice after 10 minutes. Once lentils are done, mix in a little oil, chicken, onion, garlic and cilantro and saute until chicken is cooked thoroughly. Remove all ingredients and set aside; in same pot, dissolve chicken broth in 2 cups water. Add mole sauce and mix well. Sauce thickens fast--add water if necessary. Add cooked ingredients and simmer until all ingredients are mixed. Keep on low heat or sauce will continue to thicken. Serve with tortillas, over rice.
