For most of her life, my aunt has been a vegetarian; her exceptions have been hunted game (our family loves to hunt) and Southern specialties like crawfish. This recipe is one of the family's favorites; if crawfish aren't available (or desired), shrimp will work.
Melt butter and flour; add onions and cook until wilted. Add other ingredients, reserving cheese and green onions. Simmer for at least 30 minutes; it's best served the next day, topped with provolone and green onions.

Going to make this tonight and I'll let you know how it goes. I just love corn cowder and the addtion of crawfish will make it even better!!!

Do you know where to find them locally? I had to substitute for shrimp - which is delicious - but I'd love to know where I could get my hands on some mud bugs.
If you don't care about the calories, I highly recommend using 2% milk for the richness...

I use langostino's (sp?) frozen from TJ's if I can't find crawfish at Central Fish. I havae found that they work really well (I am a big fan of Cajun food so this is a MUST!)

We're working on some bugs/improvements, and that's on our short list! We plan to offer a variety of print sizes - what's the most convenient for you (or does it matter)?
