Creamy Pecan Pralines

Pralines are a Southern delicacy, and this is a subtle spin on a classic--these pralines are smooth and delicious.

Ingredients

  • 1/2 cup water
  • 1 can sweetened condensed milk
  • 1 1/2 cups sugar
  • 1/2 stick butter (optional: use margarine or oleo)
  • 2 cups pecans, coursely chopped (optional: use walnuts)
  • 1 tsp. vanilla extract

Instructions

Bring water, condensed milk, and sugar to soft boil stage (approximately 10-12 minutes--use a candy thermometer for accuracy). Add butter and continue cooking for 1-2 minutes. Remove from heat and add vanilla. Beat until mixture thickens; stir in pecans. Drop by tablespoons onto waxed paper.
