Crunchy Broccoli Salad

This recipe comes from the wife of a fellow Rotarian—she's obviously a foodie, and after requesting another of her recipes, she brought copies to a recent dinner for this one, as well.

Ingredients

Salad:

  • 1 head romaine or iceberg lettuce, chopped
  • 1 bunch fresh broccoli, chopped
  • 5-6 green onions, chopped

Topping:

  • 1 cup chopped walnuts
  • 1 pkg Ramen noodles, broken up (do not use the seasoning packet)
  • 4 tablespoons butter

Dressing:

  • 1 cup vegetable oil (not olive oil)
  • 1 cup sugar
  • 1 tablespoon soy sauce
  • 1/2 cup red wine vinegar
  • Salt and pepper to taste

Instructions

In a frying pan, cook walnuts and Ramen noodles in butter, over medium-high heat, until crunchy and toasted. Once cooled, add to the salad mix. Mix dressing and add to the salad, to taste.
