Nanny's Cornbread

My grandmother, Jean Cate, passed away on Tuesday, August 5, 2008. She was a big influence on my love for food and cooking; this was her recipe for cornbread. Note: she didn't usually measure, so the ingredients are estimates.

Ingredients

8 tablespoons cornmeal
3 tablespoons flour
1 egg
Buttermilk, to texture
Water

Instructions

Preheat oven to 425 degrees. Grease muffin pan and heat in oven while mixing cornbread. Mix together cornmeal, flour and egg. Pour in buttermilk until mixture is the same consistency as pancake mix. Add 3-4 tablespoons of water. Fill each muffin 2/3 full. Place in oven and check after 10 minutes; cook until golden.
