I made this up with what I had on hand, but I liked the way it came out. The crisper and tarter the apple, the better - it could also benefit from some candied walnuts.

In a large bowl, gently toss spinach in oil and vinegar. In individual bowls, top tossed spinach with pepper, cheese, apples and onions. Enjoy.
