Spiced & Spiked Apple Cider

Posted by jamescollier on Nov 18, 2009

I'm not much of a cider person, but I wanted to try this for a pre-Thanksgiving dinner party. I couldn't believe the reaction—it was a hit!

Ingredients

  • 1 gallon apple cider (I used SaveMart's Sunnyside brand)
  • 2-3 cinnamon sticks
  • 20 cloves
  • Zest from 2 lemons
  • 2 cups dark rum (or to taste)

Instructions

Bring cider, cinnamon sticks, cloves and lemon zest to a boil in a large saucepan; simmer for 5-10 minutes. Remove cinnamon and set aside; strain cider into a large Crockpot and return cinnamon to mixture. Stir in rum and set the temperature to low. The cider seems to get better as it sits.

It's really that easy, and the smell is wonderful.

This sounds like a winner to me! I really like cider in the winter, something about it makes me think "christmas". And with the addition of the Rum I'll be thinking "fun christmas". Nice!

I've used Makers Mark with warmed apple cider, cinnamon sticks, and cloves. It was delicious. Will have to try with the rum this season!

How many servings does this yield?

This fills about 2/3 of my large crock pot, and can serve 12-15 people depending on how festive they're feeling :-)

Just started a 5 gallon batch of hard cider (cyser actually). Eight 64 oz. bottles of Langleys apple juice from Winco. 3/4 gallon of raw honey and 2 granny smith apples, seeded and chopped. Lalvin D-47 wine yeast. After initial fermentation, I will transfer to a glass 5 gallon jug with cinnamon sticks, allspice, and a few cloves. It will sit on that, and perhaps some brown sugar for a month. Then bottling. Started at the end of June, will be ready for the holidays.
