Squash Souffle

Ingredients

  • 2 1/2 lbs. yellow squash - cubed
  • 2 medium/large onions
  • salt

Instructions

  1. Cook until tender.
  2. Strain in colander.
  3. Put into blender/Cuisinart, add 4 slices of bread, centers only, torn into pieces, add 1 stick margarine, 3 eggs. White pepper and salt to taste.
    • 1/2 tsp. baking powder
    • 2 tbsp. flour
    • 1 cup milk
  4. Bake in greased/floured casserole in 350° oven for 1 hour. Place in broiler[?] pan with hot water. Remove and let rest 15 minutes before serving.
