Strawberry & Lemon Curd Gateau

This was served at a dinner I was recently invited to. Thanks for sharing, Flannery!

Ingredients

Cake Ingredients:

  • 1/2 cup butter
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup self-rising flour
  • 1/2 teaspoon baking powder

Other Ingredients:

  • 1 pint of softened Strawberry ice cream
  • 1 cup Lemon Curd
  • 1 and 1/4 cups Heavy Whipping Cream
  • 2 tablespoons lemon juice
  • 5 cups strawberries
  • 2 tablespoons sugar
  • 3 tablespoons Orange-Flavored liqueur (Cointreau, Grand Marnier, Triple Sec, etc...)

Instructions

Preheat oven to 350 degrees. Grease 9" round springform cake pan. Beat cake ingredients until creamy. Bake for 20 minutes. Cool for 5 minutes. Remove from pan and wash cake pan to use again.

Put cake back in pan upside down and freeze for 10 minutes. Spread ice cream over cake and freeze until firm.

Whip cream until it forms heavy peaks, then fold in lemon juice and lemon curd. Spoon the mixture onto the strawberry ice cream. Cover and freeze overnight.

Take cake out of the freezer for about 15 minutes before serving. Sllice up half of the strawberries to decorate the top of the cake.

Put the other half of the strawberries into a blender with the 2 tablespoons of sugar and the Orange-Flavored liqueur. Use this to spoon onto individual slices of cake before serving. Enjoy!
