Sweet Potato Casserole

Ingredients

  • 3 cups mashed sweet potatoes (cooked and mashed in food processor or ricer)
  • 1 cup sugar
  • 1/8 tsp. salt
  • 1/3 stick butter or margarine
  • 1 tsp. vanilla
  • 1 tsp. rum
  • 2 eggs, beaten
  • 1 small can crushed pineapple, drained (I usually use the heavy syrup kind)
  • 1 cup miniature marshmallows

Combine all above ingredients and top with the following topping:

  • 1 cup brown sugar
  • 1/3 cup flour
  • 1/3 stick butter (or margarine)
  • 1 cup pecans, chopped

Instructions

Bake in 350° over for 35 minutes. Serves 8.
