Sweet Potato Casserole

Ingredients
- 3 cups mashed sweet potatoes (cooked and mashed in food processor or ricer)
- 1 cup sugar
- 1/8 tsp. salt
- 1/3 stick butter or margarine
- 1 tsp. vanilla
- 1 tsp. rum
- 2 eggs, beaten
- 1 small can crushed pineapple, drained (I usually use the heavy syrup kind)
- 1 cup miniature marshmallows
Combine all above ingredients and top with the following topping:
- 1 cup brown sugar
- 1/3 cup flour
- 1/3 stick butter (or margarine)
- 1 cup pecans, chopped
Instructions
Bake in 350° over for 35 minutes. Serves 8.
