White Bean Chicken Chili

Ingredients

  • Olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 3 C chicken broth
  • 2 cans (16 oz) diced tomatoes w/green chilis
  • 1 jar mild salsa verde (green)
  • 1 tsp dried oregano
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 lb cooked chicken, coarsely diced
  • 2 cans (15 oz) white beans (drained)
  • 1 can (15 oz) sweet corn (drained)
  • Ground black pepper and salt (to taste)
  • Cornstarch (to thicken – about 1T)

Instructions

Sauté onion in oil until soft - add garlic and sauté a bit longer

Stir in broth, tomatoes, salsa and spices – bring to boil – simmer for 10 minutes

Add chicken, beans and corn. Salt and pepper to taste. Add cornstarch to thicken (if desired).

Serve with any or all of these toppings:
Sour cream, shredded cheese, diced avocado, chopped cilantro, squeeze of lime, tortilla chips Pair with fresh-baked cornbread or warm tortillas and it’s a great winter meal!
