Sauté leek, carrots and celery with butter in med. saucepan (about 10 min. on med. Heat or until softened. ) add salt, pepper, flour, broth, Worcestershire and soy sauce. Stir and heat on medium heat until slightly thickened.
Add mixture to crock pot and cook on high for 4-5 hours or on med. for 7-8 hours.
Strain vegetables and puree. Return puree to crock pot.
Add cream and cheddar cheese to crock pot and stir.
Let cheese melt (about 15 min) and serve.
