Savory Cheddar Soup

Ingredients

  • 1 leek (Use white part of leek with only a tiny bit of green. Clean and finely chopped. )
  • 2 carrots (peeled & finely chopped)
  • 3 celery stalks (peeled & finely chopped)
  • 2 tbsp butter
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp flour
  • 2 ½ cups beef broth (can substitute vegetable broth for vegetarians)
  • 2 tbsp Worcestershire sauce
  • 2 tbsp soy sauce
  • 4 cups shredded cheddar cheese
  • 1 ½ cup heavy whipping cream

Instructions

Sauté leek, carrots and celery with butter in med. saucepan (about 10 min. on med. Heat or until softened. ) add salt, pepper, flour, broth, Worcestershire and soy sauce. Stir and heat on medium heat until slightly thickened.

Add mixture to crock pot and cook on high for 4-5 hours or on med. for 7-8 hours.

Strain vegetables and puree. Return puree to crock pot.

Add cream and cheddar cheese to crock pot and stir.

Let cheese melt (about 15 min) and serve.
