Forgotten Cake

Ingredients

  • 6 egg whites
  • 1/2 tsp cream of tartar
  • 1 1/2 cup sugar
  • 1 tsp vanilla
  • pinch of salt
  • FILLING
  • 6 egg yolks, beaten
  • 1/2 cup sugar
  • 1 tbsp flour
  • pinch of salt
  • 1 lemon, juice and grate rind
  • 1/2 cup water1/4 tsp lemon flavoring (if you like it real lemony)
  • 1/2 pint whipping cream plus a little sugar and vanilla (to use on top of cake)

Instructions

About bedtime, heat oven to 425 degrees. Line bottom of 9x9x2" pan with brown paper. You can use the insdie of a shopping bag. Beat egg whites and cream of tartar until foamy, then add sugar gradually as you continue beating. Add vanilla and salt. It should be very stiff. Put into pan and spread to the very edge. Place in oven, close door, and turn off heat. Leave until morning. It will have broken crusty parts over the top. Push these parts down and make it as even as you can and spread with half the whipped cream.

FILLING: Make at night and let cool. Mix flour with sugar and add all together and cook until thickened, over low heat or in double boiler. Cool. Next morning take cake from oven and let cool, if you have a gas oven. Whip cream and place half on cake and spread over entire top as best you can. Spread all the lemon filling over the cream. Keep in refrigerator until evening or the next day or evening. Flavor improves by standing a day or so. Cut into squares and serve with a berry or a cherry on each piece.
