Hawaiian Chicken

This was in a box of recipes my mom got from my grandma. It was written on a white notecard with the title "chicken recipe from Hawaiian Islands." My guess is she wrote it down when visiting my uncle who was stationed there for a time.

Ingredients

  • 2 frying chickens cut in pieces
  • MARINADE
  • 1 cup soy sauce
  • 1 tbsp sugar
  • 3 cloves crushed garlic
  • 3" peice of green ginger, crushed (tsp powdered)
  • juices of 1 lemon or a jigger of whiskey

Instructions

Marinate the chicken for 2 hours in 9x13 pan. Cover and bake in a moderately slow oven (325 degrees) for 45 minutes; remover cover and bake 45 minutes longer, basting occasionally with the remaining marinade. Serve with steamed rice.
