Wahoo-Sabi Salmon

A friend from class gave me this recipe—we love salmon, and are always looking for a new way to prepare it.

Ingredients

  • 2 lbs. salmon filets
  • 1 Tbsp. sesame oil
  • 1 Tbsp. rice vinegar
  • 2-3 cloves garlic, minced
  • 3 Tbsps. teriyaki marinade
  • Sesame seeds, to taste
  • 1 lime, sliced (optional)
  • Cilantro, for garnish (optional)

Sauce:

  • 2 Tbsps. mayo
  • 3 tsps. wasabe paste

Instructions

Pat the salmon dry with a paper towel. With diagonal strokes, score salmon flesh every 1/8" with shallow cuts (1/6-1/8" deep).

Mix sesame oil, rice vinegar, garlic and marinade in bowl. Brush it onto the salmon and let stand for 15 minutes. (If using skinless salmon, brush on both sides.) Cook on a hot grill about 3 minutes; flip over and brush on a second coat of sauce, cooking for another 3 minutes.

Apply thin stripes of wasabi mayo, then sprinkle with sesame seeds. Cook a couple minutes longer; the mayo and marinade will begin to glaze. Be careful not to overcook.

Garnish with lime and cilantro.
