Green Goddess Dressing

Ingredients

  • 1 clove garlic, mashed or grated
  • 4 or 5 fillets of anchovies, chopped finely
  • 3 tbsp chopped chives or green onion
  • 3 tbsp tarragon vinegar
  • 1/2 cup sour cream
  • 1 cup mayonnaise
  • salt and coarse black pepper

Instructions

Blend together all ingredients and chill. Pour liberally over coarsely torn leaves of romaine, chicory, and escarole. Toss until greens are well coated. Makes 1 3/4 cup dressing.

 

NOTE: instead of anchovies you may wish to substitute 3 tbsp anchovy past.
