Pumpkin Chocolate Chip Muffins

Driving home one day a couple weeks ago my 3 year old said "I love pumpkin" when she saw some houses that were already decorated for Fall/ Halloween. So i remembered I had some frozen pumpkin. I defrosted, baked, and pureed it and used it to make these muffins. They turned out fantastic so I thought I'd share it.

Ingredients

1 2/3 cup flour
1 cup sugar
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
2 eggs, lightly beaten
1 cup pumpkin puree
1/2 cup butter, softened
1 cup semisweet chocolate chips

Instructions

Mix ingredients well and then add chocolate chips. Pour into greased muffin tin (or use muffin liners). Bake at 350 degrees for 15-20 minutes.

I found this recipe at Mel's Kitchen Cafe. I didn't have pumpkin spice, so I also used her pumpkin pie spice recipe:

1/2 teaspoon cinnamon, 1/4 teaspoon ginger, 1/8 teaspoon nutmeg, 1/8 teaspoon cloves. Mix together for 1 teaspoon of pimpkin pie spice
