Beer Braised Beef (Slowcooker)

I had to work late and wanted to leave my husband a "manly" meal to enjoy at the end of his day.  Success!  He enjoyed it :-)

Ingredients

1 2.5-3lb tri tip or beef loin roast

2 onions, chopped into think slices

3 cloves garlic, minced

5 carrots cut into 1.5 inch segments

2 bottles of beer

2 tsp kosher salt

1.5 tsp thyme

3 tbsp olive oil

 

Instructions

Heat the oil in a large dutch oven/cast iron pot over high heat.  When heated, place the tri tip (carefully!) in the pot for 2-3 minutes on each side to get a nice sear.

Remove the meat and put in your slow cooker.

Add the onions and garlic to the dutch oven without cleaning after the beef so the beef flavor can be absorbed.

Stir and cook for one minute, then add the two bottles of beer (this is a great way to use up the old weird beer that's been sitting in your fridge from who knows how long!  We used two bottles of 2 year old Christmas Ale!  It was still good!)

Cook for 5 minutes over medium heat.

Add the spices and carrots to the onion/garlic/beer pot, then pour over the beef in the crockpot.  Cook on high for 5 hours, then shred the beef with 2 forks.  Cook on low for 1-2 more hours or until tender and falling apart.

Serve over rice or garlic mashed potatoes.
