2-3 chicken breasts (I used 2 very large ones- hormones much? yikes...)
Home-made taco seasoning (1 tsp cumin, 1 tsp chili powder, 1/2 tsp salt, 1/2 tsp garlic powder)
1 cup of water
-------------------
1 pkg corn tortillas
1 can cream of chicken soup (I used 98% fat free)
1 can chopped green chillies
1 can green enchilada sauce
1/2 sour cream (I used light)
1/2 cup finely chopped onion
2 cups grated cheese (I used 1.5 cups reduced fat sharp cheddar, and 1/2 cup pepper jack)
In the morning, place the first three items in the crockpot on high. At lunch time, use two forks to shred the chicken, remove from the crockpot, and set aside. Pour out any remaining liquid.
Next, mix the onion, sour cream, green chilies and chicken soup in a bowl.
Then, start layering the ingredients in the following order:
soup mixture
torn tortillas
enchilada sauce
chicken
cheese
...and repeat two more times.
Set your crockpot to low, and cook until dinner time :-)
