Spicy beef noodle broth
Posted by nickgundry on Dec 23, 2009
Not much of a story to this recipe. I had a craving for Waggamama's chili ramen so I decided to try and recreate it from memory. It turned out really good and was very quick to make, try it.
Ingredients
- 1 bunch of green onions
- 2 cups (or a handful) of bean sprouts
- 1 cup cilantro (a handful worked for me)
- 2 tins of Vegetable broth
- 1 "bunch" of Japanes noodles (my packet came with three "bunches")
- Garlic powder
- 3 - 4 dashes of Paprika
- 3 - 4 dashes of cayenne pepper
- Salt and pepper to taste
- 1/2 lb of thinly sliced beef (I used top round but sirloin would be good too)
- Splash of lime
I added a couple of extra dashes of cayenne to my bowl to give it a bit more kick as I was making this for the family I had to be sensitive to the kids' taste buds. It's a pretty loose recipe and easy to add spice to suit your taste.
Instructions
- Ok so this is the easy part. Grab a saucepan and empty the two cans of vegetable broth into it and put it on the stove on high. You will bring this to the boil.
- While the broth is coming to the boil add 2 dashes of paprika, 2 dashes of cayenne pepper, 2 dashes of garlic pawder, salt and pepper.
- While the broth is coming to the boil slice the thinly cut beef into slices about 1" across and 2 inches long.
- Fry the beef in a frying pan on high, season the beef with a couple of dashes of paprika and a dash of garlic powder.
- The beef will take a few minutes. While this is cookng slice the green onions into 1/2 inch slices.
- When the beef is browned and the broth is boiling add the beef to to the saucepan with the green onions, noodles and bean sprouts.
- Add the cilantro and a splash of lime juice. I used a squeezy bottle.
- Taste your broth with a spoon (be careful, remember to blow on it to cool it down as it is boiling).
- Add paprika, cayenne pepper, salt and pepper to get the right balance you want.
- Serve in a bowl, eat, enjoy.
