Breakfast Casserole

Ingredients

1 Pound of bulk Sausage or 1/2 pound of center cut bacon.
4 Cups of bread, cut in pieces (day or two old is best)
2 Cups of shredded cheese of your choice. I used low fat Mozzarella.
7 - 10 eggs beaten
4 cups of milk
1 teaspoon of mustard
1 teaspoon of salt
1/2 teaspoon of garlic powder
1/2 teaspoon of onion powder
1 cup of diced mushrooms

Instructions

Cook and crumble protein and cover.

Lay diced bread in a well buttered 9x13 baking dish. I use No Cal Butter Spray.

Sprinkle with cheese.

Combine eggs, milk and spices and pour over bread and cheese. Make sure all the bread is coated.

Sprinkle protein and mushrooms on top.

Cover and chill overnight. Remove casserole from fridge at least 30 minutes before baking. Why this? It helps it set up to cook evenly.

Heat oven to 325 degrees.

Bake uncovered for 1 hour.

I've made this one before (most recently when I had overnight guests). I add ortega chillis diced when I can't get I can't get fresh Italian peppers (I cook the peppers in with the protein). VERY yummy!!
