Avocado Black Bean Salad

I've heard a lot about a local tri-tip competition, but feel the side dishes (Plus, something for us vegetarians) are what really make A MEAL. This uses all of my favorite ingredients and I hope you like it too!

Ingredients

  • 2 tbs lemon juice
  • 1 tbs mustard (whole grain if you have it)
  • 2 tbs olive oil
  • 1 can black beans - rinsed/drained
  • 1 cup of corn (fresh or thawed)
  • 1 avocado - diced
  • 1 red pepper - diced
  • Cilantro - chopped (at least 1/2 a cup, but I usually put more!)
  • 1-2 celery stalks - diced
  • 2 or so green onions - sliced

Instructions

Mix up lemon, mustard, and olive oil in a large bowl.

Put all the other ingredients in the bowl, season with salt and pepper, and gently toss to combine everything with the dressing.
