A dear friend of mine shared this recipe with me and I enjoy making it from time to time myself. Tonight I made and ate the whole bundle myself as my dinner. MMMM
1 Bundle of Asparagus (Ends trimmed)
1 Cup bread crumbs
1/2 cup grated parmesan
2 eggs, beaten
1/4 cup white wine
Olive oil
Mix 2 eggs and wine in a bowl and pour into a shallow dish. (Even a deep cookie sheet will work)
Mix parmesan and bread crumbs in a bowl and pour into another shallow dish.
Heat a thin layer of oil in a frying pan.
Coat asparagus in egg mixture and dredge in bread crumb mixture. Place a single layer in the oil, turning once to brown both sides. Place cooked ones on a paper towel and place next batch in the oil.
