I'm a cheesey, mayo(y), creamy, saucy vegetable lover, but I know that's not very healthy! This leaves me on the lookout for new ways to make vegetables flavorful without being drowned in salt and sauces!
This recipe's a keeper for me so I knew that meant I had to share!
1 lb cauliflower florets
3/4 cup chopped onion
2 cloves minced garlic
1 can diced tomatoes
2 tblsp drained capers
1/2 cup crumbled feta cheese
Fresh Dill
Preheat oven to broil.
Lightly steam cauliflower (maybe 4-6 min?) You don't want it mushy!
Saute onion and garlic for 5-6 min or until tender. Add tomatoes and capers and continue to simmer and stir for about 7 more minutes.
Put tomato mixture in the bottom of a 2 quart casserole dish. Arrange cauliflower on top of tomatoes and place (uncovered) in the oven for 5- 7 min. Just keep an eye on it so it doesn't burn!
Sprinkle with dill, serve, and ENJOY!
