As the winter approaches, I start craving the warmth and comfort that only a hearty soup for dinner can offer. This is the tastiest and most simple soup recipe I've ever come across. I found the initial recipe in Vegetarian Times magazine several years ago, but I've made some changes to it to pump up the flavor.
Personally it's just about the easiest recipe ever. Instead of having to buy specialty ingredients like masa harina, etc - the corn tortillas break down while cooking and help thicken the soup.
1 tbs olive oil
1 onion (finely chopped)
2 cloves of garlic (minced)
1 32oz can chopped fire-roasted (or mexican stewed) tomatoes
3 corn tortillas (cut into quarters)
1 can mild green chiles
3 tbs cilantro (chopped)
1 tsp hot sauce
3 tbs goat cheese (softened)
3 tbs sour cream
1 avocado (sliced)
Heat oil in large pot over medium heat. Add onion and saute until soft (7 min?) stirring occasionally. Add garlice and saute 1 minute more.
Add tomatoes, 2 cups water, chiles, and tortillas. Bring to a boil, then reduce to medium low. Cover and simmer 15 minutes or until tortillas have broken down into tiny pieces. Stir in cilantro and hot sauce.
Combine goat cheese and sour cream in a small bowl. Ladle soup into bowls, then swirl goat cheese mixture into each serving. Garnice with avocado and additional cilantro.
