Sauteed Potatoes Promenade

Ingredients

  • 3 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 2 teaspoons freshly grated lemon zest
  • ½ cup olive oil
  • 3 lbs. large potatoes (about 6), sliced ¼ inches and patted dry
  • 1/3 cup fresh parsley (flat leaf), minced

Instructions

In saucepan, combine vinegar, garlic, zest and salt and pepper. Bring to a boil, simmer for two minutes. Remove from pan and whisk in ¼ cup of oil.

In two large skillets, heat two tablespoons of remaining oil over medium-high heat until hot (not smoking). Cook potatoes in one layer in batches, turning them, for 10-15 minutes or until golden brown on the outside and tender inside. Transfer to serving dish; pour garlic mixture and toss with parsley.
