Answering the call for persimmon recipes! I've never made them, but they've always been delicious when my grandmother and my mom have made them! I found the recipe in my grandmothers cookbook in her handwriting, so I'm not sure if it came from somewhere, because calling something "super" wasn't exactly her style... I have no idea how many cookies this makes or what the prep time is, but anyway, here you go!

Cream butter & sugar, add beaten eggs, persimmon pulp, pineapple & vanilla. Add flour sifted wtih baking powder & salt. Mix in a little at a time - add nuts & coconut. Drop by teaspoonfuls on pans & bake 15 min or until bottom is slightly brown.

One update - I confirmed the recipe came from my grandmothers cousin - not sure if its a Mennonite thing:)
