Sun-Dried Tomato Turkey Burgers with Chipotle-Chili Mayo

I've been trying to eat more turkey. I love cheeseburgers. But turkey burgers can be so boring and tasteless. This adds enough zing to not even miss the meat or cheese.

Ingredients

Burger:

  • 1 lb ground turkey
  • 1 chopped onion
  • 1 cup fresh breadcrumbs, any kind (must be fresh, minced)
  • 1 egg, beaten
  • 4 oz. sun-dried tomatoes in oil, drained, minced
  • 2 Tbs light mayo or light sour cream
  • 2 tsp ground cumin
  • 2 Tbs minced basil
  • 1 tsp garlic powder

Chipotle-Chili Mayo:

  • 3/4 c light mayo
  • 2 Tbs minced onions
  • 2 Tbs minced chipotle chilis

Onion Buns

  • 1-2 sliced Avocados
  • 1-2 sliced Tomatoes

Instructions

Coat grill pan with non-sticking spray and heat on medium-high. Mix all burger ingredients together in large bowl. Form into four patties. Grill 6-minutes each side (160F internally).

Note: turkey burger patties often have more moisture than their hamburger counterpart. It's important to not move them around the pan when cooking and to only flip them once.

Spread chipotle-chili tarter sauce on both sides of buns and assemble burger with sliced avocado & tomatoes.
