Swedish Pancakes

One of my best childhood memories is when my grandpa came over -- usually on Saturday -- to make me and my four siblings Swedish pancakes. We would slather them in butter, sprinkle with sugar, and roll them up. Not only tasty, but filled with love.

Ingredients

1/2c sifted all-purpose flour
1/2t salt
2 eggs well-beaten
2/3c milk or soy milk
1T melted butter
1t vanilla
vegetable oil

Instructions

Combine flour & salt.

In a separate bowl, combine eggs, milk, melted butter; add all at once to flour mixture. Add vanilla. Beat smooth electric mixer; cook at once.

Heat approximately 1t of oil in 8” frying pan. Add 1/4c of batter to pan. Tilt pan to spread batter thinly. When lightly browned, turn; brown other side. Remove. Repeat until batter is gone.

Serve with butter & sugar, jam, or syrup.

Makes 6-8 crepes.
