Crumb Topping
4 Tbsp. butter
2 cups bread crumbs
Large pinch salt
1/2 tsp. pepper
4 oz. grated cheddar, and jack cheese (1/2 cup)
Creamy Mac and Cheese
4 large eggs
2 cans (24 oz.) evaporated milk
1/2 tsp. hot pepper sauce
2 Tbsp. salt
1/2 tsp. black or white pepper
1 Tbsp. dry mustard dissolved in 1 Tbsp. water
1 tsp. Old Bay or other seafood seasoning
1 lb. elbow macaroni
8 Tbsp. butter
24 oz. Brie, cut when chilled into small cubes
1/2 lb. crab, well drained
For the bread crumbs: heat butter in large skillet over medium heat until foam subsides. Add bread crumbs, cook, tossing to coat with butter, until crumbs begin to color. Season to taste with salt and pepper. Set aside. When cool, stir in cheese.
For Mac and Cheese: mix eggs, milk, pepper sauce, salt, pepper, Old Bay, and mustard mixture in bowl; set aside.
Bring water to a boil in saucepan. Add salt and macaroni, cook until al dente and drain. Combine macaroni with butter; toss to melt. Add crab. Pour egg mixture over buttered noodles along with 3/4 of the brie. Stir until thoroughly combined and cheese starts to melt. Gradually add remaining cheese, stirring constantly until mixture is hot and creamy, about 5 minutes.
Poor cooked mac and cheese into baking dish. Spread crumbs evenly over top. Bake at 350F until brown and set.
