Boil the chicken in water seasoned with salt, pepper, and poultry seasoning. De-bone the chicken and cut it into bite-size pieces. Boil the spaghetti in the remaining broth from the chicken. (Add more water if you need to.) Saute onions, celery, green pepper, in butter until translucent. Mix soups, Rotel tomatoes, onions, celery, green pepper, and mushrooms in a large bowl. Add Italian Seasonings to taste. Add cooked spaghetti and cheese and toss thoroughly.
