Season the chicken with salt and pepper, if desired. Brown the chicken on all sides in hot oil in a very large skillet about 10 minutes.
Transfer chicken to 3 quart baking dish, reserving drippings in skillet. Add mushrooms and onion to drippings. Cook over medium heat, stirring occasionally, 5 minutes; drain fat. Stir in undrained tomatoes, tomato paste, sage and ½ cup water. Spoon over chicken.
Bake uncovered, at 375 degrees.
