Contadina Saucy Baked Chicken With Mushrooms

Ingredients

  • 3 lb. chicken pieces
  • 1 tbsp. Olive oil
  • 1 large onion, cut into thin wedges
  • 1 tsp. dried leaf sage, crushed
  • 1 can (14.5 oz.) Contadina Recipe Ready Diced Tomatoes
  • 1 can (6 oz.) Contadina Italian Paste with Italian Seasonings
  • 3 cups fresh baby portabella mushrooms, halved

Instructions

Season the chicken with salt and pepper, if desired.  Brown the chicken on all sides in hot oil in a very large skillet about 10 minutes.

Transfer chicken to 3 quart baking dish, reserving drippings in skillet.  Add mushrooms and onion to drippings.  Cook over medium heat, stirring occasionally, 5 minutes; drain fat.  Stir in undrained tomatoes, tomato paste, sage and ½ cup water.  Spoon over chicken.

Bake uncovered, at 375 degrees.
