Original Nilla Banana Pudding

Ingredients

  • ¾ cup sugar, divided  
  • 1/3 cup all purpose flour
  • dash salt   
  • 3 eggs, separated
  • 2 cups milk   
  • ½ tsp. vanilla extract
  • 35 Nilla wafers   
  • 5 ripe bananas, sliced

Instructions

Preheat oven to 350 degrees.  Beat shortening and sugars together until creamy.  Add eggs and peanut butter; beat well.  Sift together flour, baking soda and salt.  Add to creamed mixture, blending well.  Stir in oats.  Shape dough into 1-inch balls.  Place onto ungreased cookie sheet making criss-cross design with fork on each cookie.  Bake for 8-10 minutes.  Makes 6 dozen.
