As someone who spent his early years almost entirely north of Shaw, I am well aware of the south of Shaw and taco truck biases. So when I told some friends and family that I had a great vegetarian burrito from a taco truck I was not surprised to hear a chorus of "Eww" and "I can't believe you ate at a roach coach!" The great thing about being fairly independent is that you no longer have to live entirely according to other people's prejudices and you quickly find out that the aforementioned biases are unfounded. My experience at Mariscos shattered the taco truck bias. Mariscos Colima is situated in the NW corner of Chestnut and Clinton. The dining area is a covered patio flanked by two taco trucks. The patio is consistently clean and the restaurant always has several people eating/waiting. While the service is not particularly friendly they are speedy and the food is a good value - burrito/quesadilla/soda for $8. The difficult thing about vegetarian Mexican fare is a lack of creativity. At your typical restaurant I get something incredibly greasy/soggy, poorly wrapped, and almost totally comprised of refried beans. Colima seems to make an effort and largely succeeds: the burrito has the right mix of spanish rice, refried beans, cheese, lettuce, tomato, onions, and cilantro. Not greasy, tastes fresh, and doesn't fall apart when I try to eat it. This adds up to burrito bliss for me. They also have several hot sauces to choose from and lime to add flavor to the dishes. Unfortunately I cannot attest to the meat dishes, but for vegetarian fare this is a sound bet.

Interesting perspectives here, Brandon - there's a lot to pull from this.
First, I've never considered what options there are in other cuisines for vegetarians - I can only imagine that the pickings are slim.
Regarding Roach Coaches, and other finds on the fringe (of the majority, at least), that's one of the things that I love about Fresno. Not that I like the walls we've built between oursleves; rather, that we can cross boundaries - disrupt our comfort every now and then - and find great places to eat, to walk, to whatever. It's never-ending here.

This is one of my favorite locations. I had the Marisco Colima the last time I was there and was completely satisfied. The best part is that it's two taco trucks, each with it's own specialty. On the right/NW side you have the more typical taco truck with meat selections (and vegetarian I hear) and on the left/SW side you have the truck with the sea food offerings. Very good spot for food.

I can attest to, at least, the carne asada tacos over there. They're not the greatest tacos I've ever had, but they're good. I ate there and went back ... with as many great tacos as there are around here, that's saying something.

I'm always scared that vegetarian -to some - simply means lacking meat.
MANY places use lard like it's going outta style. In fact, most popular places make the beans and rice that way. Casa Corona, Antonios, & even Javiers fry their chips and soften their corn tortillas in lard :(
Does anyone know if that is the case here?
